Pick ours. Our young wild mushrooms get sprinkled with fine Italian herbs before being liberally tossed in perfectly seasoned sunflower oil. Stir through a freshly prepared risotto, or mix with pancetta, thyme and cream for a wonderfully rich pasta sauce.
You could even go as far as making your own wild mushroom ravioli using them between sheets of freshly rolled pasta.
