Here's how to set your toasted ciabatta on fire. Metaphorically of course. Pile on the delicately roasted chunks of red pepper, chopped vine-ripened tomatoes, diced red onion and wait for the chilli to kick in. Extra virgin olive oil keeps it all from getting out of hand.

Tips

  1. To make crostini simply cut slices of bread such as French stick or Italian ciabatta, brush with olive oil and toast in a hot oven (200c, mark 6) for 6-7mins until crisp.
  2. For garlic lovers simply rub a clove of garlic onto the bread before toasting.
  3. You dont have to be a bread lover to love these, try them on baked potatoes or over roasted vegetables.
