The Italian foodie capital, Piemonte, is located in the North West and has always been known for fabulous wine and cheese.  Now the launch of two superb new Piemontese sauces will add another famous pairing to this region.

 

Salsa Verde and Salsa Rossa are two lively sauces whose origins date back to medieval times believe it or not.  Thankfully, they're perfect in your cupboard today.

We've created a perfectly balanced salsa by being rough with the parsley, adding a few lively capers and making sure there's enough fragrant garlic to bring you one of the most popular green sauces this side of North West Italy.

Can't you just picture it gracing a piece of chunky white fish, spooned alongside a plate of hot or cold meats or mixed into your freshly cooked vegetables?

If it's red, we've taken it prisoner in this salsa. Firm red peppers, sun-dried red tomatoes and a good handful of a vivacious chilli (red, of course.) We mustn't forget the garlic, or the fact that our salsa will sit delicately next to seafood and all kinds of hot and cold meats. It can even cheer up other vegetables, whatever their colour.

Tips

  1. Salsa verde is always served with Bollito Misto in Italy; a meal of various meats and offal, including beef and sausage simmered together for many hours until tender and flavoursome.  Delicious if you have time to make it, if not it works equally well on the side with any hot or cold meats or makes a popular crust topping on fish.
  2. Salsa rossa is another regular feature of Bollito Misto but also makes other great pairings.  Try it as a dip with cooked sausages or a sauce for seafood or add a dollop to mayonnaise for a tastier and creamier bit on the side.
